Squash soup
Butternut squash is my favourite squash to cook with. It's sweet, easy to prepare and can be found on sale all year round. This recipe is from a magazine cut and it's quite yummy!
Ingredients:
- 1 butternut squash, peeled and cut in small cubes (weight after prepared = 1kg)
- 3 medium onions, chopped
- 1 rosemary twig, whole
- 1 vegetable stock
- 1 liter water
- chives, chopped
- olive oil
- salt and pepper to taste
Method:
- Fry the onions and rosemary twig in olive oil.
- Add the squash, vegetable stock and water and let it cook in medium heat for 20 min or until fully cooked.
- Remove the rosemary twig and blitz.
- Add salt and pepper to taste.
- Serve with chives on top.
