Squash soup

Butternut squash is my favourite squash to cook with. It's sweet, easy to prepare and can be found on sale all year round. This recipe is from a magazine cut and it's quite yummy!

Serves: 8 portions.

Ingredients:
  • 1 butternut squash, peeled and cut in small cubes (weight after prepared = 1kg)
  • 3 medium onions, chopped
  • 1 rosemary twig, whole
  • 1 vegetable stock
  • 1 liter water
  • chives, chopped
  • olive oil
  • salt and pepper to taste
Method:
  1. Fry the onions and rosemary twig in olive oil.
  2. Add the squash, vegetable stock and water and let it cook in medium heat for 20 min or until fully cooked.
  3. Remove the rosemary twig and blitz.
  4. Add salt and pepper to taste.
  5. Serve with chives on top.
