Avocado & smoked salmon fusilli
My partner found this recipe. It has two strong points in it's favour. It's very tasty and, I kid you not!, takes 10 min to do.
Ingredients:- 200g fusilli
- 1 ripe avocado
- 100g smoked salmon, sliced into strips
- 1 garlic clove
- 1 small bunch of parsley
- 2 tbsp extra virgin olive oil
- lemon juice: 1 tbsp + squeeze in each plate
- Salt and pepper to taste
Method:
- Cook the pasta in salted water. Drain the pasta but reserve 50 ml of the cooking water.
- Put the avocado, half the salmon, garlic, half the parsley, olive oil, 1 tbsp lemon juice, salt and pepper in a food processor and blitz.

- Place the remaining salmon on top of the pasta on the plate, plus a squeeze of lemon juice and the remaining parsley chopped.
