Avocado & smoked salmon fusilli

My partner found this recipe. It has two strong points in it's favour. It's very tasty and, I kid you not!, takes 10 min to do.

Serves: 2 persons.

Ingredients:
  • 200g fusilli
  • 1 ripe avocado
  • 100g smoked salmon, sliced into strips
  • 1 garlic clove
  • 1 small bunch of parsley
  • 2 tbsp extra virgin olive oil
  • lemon juice: 1 tbsp + squeeze in each plate
  • Salt and pepper to taste

Method:
  1. Cook the pasta in salted water. Drain the pasta but reserve 50 ml of the cooking water.
  2. Put the avocado, half the salmon, garlic, half the parsley, olive oil, 1 tbsp lemon juice, salt and pepper in a food processor and blitz.

  3. Toss the sauce through the pasta and add the reserved water.
  4. Place the remaining salmon on top of the pasta on the plate, plus a squeeze of lemon juice and the remaining parsley chopped.
