Salmon and courgette linguine

Another magazine recipe. It's relatively easy and quick to make.
I've made two changes to the recipe:
  • originally described with spaghetti but I prefer linguine.
  • the ingredients were described for 4 persons. Not in this house! We like pasta with plenty in it so, as far as we're concerned, this only feeds 2 persons. Maybe 3...
Serves: 2 persons.

Ingredients:

  • 200g linguine
  • 250g salmon
  • 1 big onion, chopped
  • 2 garlic cloves, chopped
  • 250g courgette (1 courgette), cut into strips
  • 2 tbsp white wine
  • 5 tbsp double cream
  • zest of 1 lemon
  • 3 tbsp lemon juice (½ lemon)
  • olive oil
  • salt and pepper to taste

Method:
  1. Grill the salmon without any oil.
  2. Flake the fish.
  3. Cook the pasta in a pan of salted water until al dente.
  4. As the pasta cooks, fry the onion and the garlic in olive oil.
  5. Add the white wine and let it simmer until evaporated.
  6. Add the double cream and the lemon zest.
  7. Add the courgette and the lemon juice and let it cook for 1 min.
  8. Add the salmon and season with salt and pepper.
  9. Drain the pasta and add it to the frying pan and mix it with the sauce.
