Granola
It took me a while to get this recipe as I wanted it. I reduced the liquid content (honey and coconut oil) as much as possible to make it healthier and it took me some trial and error to get it just right.
Noticeable, there aren't any raisins in this recipe. I don't like dried fruit. As far as I'm concerned, fruit was made to be eaten fresh or in jams. However, for anyone who does, raisins can easily be added by reducing some of the dried content (seeds and/or nuts) and replacing them with raisins.
Serves: 1 jar of 2 litres.
- 350g jumbo rolled oats
- 200g mixed nuts (I use what I have at home: nuts, almonds, cashews, hazelnuts)
- 100g pumpkin seeds
- 100g mixed seeds (I use what I have at home: sesame, sunflower, flax, poppy)
- 50g coconut shavings
- 50g honey
- 50g coconut oil
- 2 tbsp cinnamon
- 1 pinch of salt
Method:
- Heat the honey and coconut oil until melted and then leave to cool.
- Hand-crush the nuts. I do this by hand with a mortar and pestle because I like the texture and crunch that the bits of nuts give in the end product. It will also help them release their natural oils and flavour. However nuts can also be chopped with a knife if you know how to do this. Avoid putting them in a food processor as it will grind them too much and you'll end up with a fine powder instead.
- Mix all the dry ingredients into a baking tray, including the cinnamon and salt.
- Add the honey/coconut mixture and coat all the ingredients until all covered. Mix them thoroughly and make sure honey/coconut oil mixture hasn't been left attached to the bottom of the tray.
- Bake at 150°C for 45-60min until golden, mixing the granola in the tray every 15min for an even bake.
