Broad beans with chorizo and bacon

This is a Portuguese recipe that is easy to make, filling and very good to cure constipation. LOL!

I usually make it with chorizo only but I had some bacon in the freezer and seeing online that some recipes include it, I decided to add it as well. It is a good addition but it will be just as yummy without.

If not using bacon, use a whole chorizo.

The only thing I struggle with this recipe is whether to add a side dish to it or not. I've served it with bread or white rice before and it works but traditionally it is served alone. A full meal in itself.

Serves: persons (starter), 3 persons (main with a side dish), 2 persons (main without a side dish). 

Ingredients:

  • 1 medium onion, chopped
  • 2 garlic cloves, chopped
  • 1 bay leaf
  • ½ chorizo (80g), sliced
  • 2 rashers of bacon (100g), in strips
  • 100ml wine (preferably red but if you only have white it will do too)
  • 1 tbsp tomato paste
  • 1 tsp paprika (omit this if using Spanish chorizo)
  • 500g broad beans
  • 200ml water
  • fresh coriander to taste
  • olive oil
  • salt & pepper to taste
Method:
  1. Fry the onion, garlic and bay leaf in olive oil.


  2. Add the chorizo and bacon and fry until golden.




  3. Add the wine, tomato paste and paprika and let it cook until all the alcohol is evaporated. Omit the paprika if using Spanish chorizo as it already has a ridiculous amount of paprika and no more will be needed.


  4. Chop the coriander stalks and finely chop the coriander leaves.


  5. Add the coriander stalks, broad beans, water and salt & pepper to taste and let it cook until the broad beans are tender, about 20 min. I used frozen broad beans straight from the freezer.


  6. Add the coriander leaves in the end and serve immediately. I actually forgot to add the coriander leaves in the pan so scattered them on the plate.
