Alentejo's tomato soup
If you google for 'tomato soup', you are not going to get anything near what this soup is. This is a soup typical from Alentejo, a region in the south of Portugal.
The soup is easy and quick to make and very tasty.
Recipe from Margarida Pinto's Alentejo cuisine.
Serves: 3 persons.
Ingredients:
- 750g ripe tomatoes, chopped
- 1 medium onion, chopped
- 2 garlic cloves, chopped
- 1 bay leaf
- olive oil to taste
- 1 litre of water
- 2-3 slices of bread / person
- 3 eggs
- mint leaves to taste
- salt & pepper to taste
Method:
- In a pan, fry the onion, garlic and bay leaf in olive oil.
- Add the tomatoes and let them cook until they start coming apart.
- Add the water and salt & pepper to taste and let it cook until the tomatoes are very soft.
- Add the mint and stir. I added quite a lot and it was very minty!
- Add the eggs and poach them.
- In the soup plate, layer the bread slices, pour the soup and the egg on the top.
