Cream milk (Leite creme)
Leite creme may look like crème brȗlée but this traditional Portuguese recipe is different. It has no cream, only milk, and it is not baked. Easier to make and very tasty!
A good closure for a rubbish year.
Serves: 10 persons.
Ingredients:
- 7 egg yolks
- 2 tbsp plain flour (or change to 1tbsp cornflour for gluten-free)
- 200g sugar
- 1 litre of milk
- 2 lemon peels
- 1 cinnamon stick
- 10 tbsp demerara sugar
- In a pan, whisk the egg yolks with the flour. Then add the sugar and whisk well to combine.
- Add the milk, slowly, and whisk until all combined.
- Add the lemon peels and cinnamon stick and bring the pan to a low heat. Whisk often.
- When the milk starts boiling, remove the lemon peels and the cinnamon stick and divide the mixture between dessert bowls.
- Let it cool and then put in the fridge for at least 1 hour.
- Sprinkle 1 tbsp of demerara sugar evenly on top of each, making sure the top is completely covered. Using a cook's blowtorch, caramelise the sugar until dark brown and crisp. Leave to cool a little and then serve immediately.
