Sausages in cabbage rolls

Another Portuguese recipe which I haven't done for far too long. It is very easy to make but requires good quality sausages, butcher sausages.

I made the recipe with 4 sausages but the ingredients were enough to do the 6 sausages I usually make.

Serves: 3 persons.

Ingredients:

  • 6 butcher sausages
  • 12 cabbage leaf
  • 1 onion, peeled and chopped
  • 2 garlic cloves, peeled and chopped
  • 1 bay leaf
  • 2 cloves
  • 1 tin of chopped tomatoes (400g)
  • 150ml white wine
  • olive oil
  • salt & pepper to taste

Method:

  1. Cut a bit of the cabbage thick stem. This will help the cabbage cook more uniformly.

  2. Roll each sausage in 2 cabbage leaves and secure them with cocktail sticks. Reserve.

  3. Heat the olive oil in a pan with the onion, garlics, bay leave and cloves and fry until the onions are soft.

  4. Add the tomatoes, white wine and salt & pepper to taste and let it cook for 2 min.

  5. Add the cabbage rolls and enough water to half-submerge them. Let them cook for 30 min. Turn the rolls halfway through the cooking.

  6. Serve with white rice or couscous. We made couscous by adding the hot cooking juice to cover the raw couscous, 5 min and it's done!

Do not through away the cooking juice. Store it in the fridge or freezer and use it later to cook a rice with diced meat. Just cook the meat in the juice and then add the rice. It makes for an easy and quick weekday dinner.
