Ajlouk de zucchini

A vegetarian dish with courgettes. That's what I felt like cooking.

Searching through my books, I found this recipe in Darian Allen's book. It caught my eye for it's simplicity. 

I would recommend adding plenty of olives as it makes the dish taste even better. In the end I had each mouthful with 1 olive! 

Serves: 550g.

Ingredients:

  • 550g courgettes, peeled and chopped
  • 2 garlic cloves, crushed
  • 1 tsp ground coriander
  • 1 tbsp lemon juice
  • 1.5 tbsp olive oil
  • salt to taste
  • olives to taste (plenty!)
Method:
  1. Cook the courgettes in salted water until soft. Drain and press gently to squeeze out the excess water.

  2. Mash the courgettes with a fork. 

  3. Add the lemon juice, garlic and ground coriander. Mix well. Taste. Add salt to taste and olive oil.

  4. Transfer to a serving dish and garnish with olives.

  5. Serve cold or at room temperature with crusty bread.
