Ajlouk de zucchini
A vegetarian dish with courgettes. That's what I felt like cooking.
Searching through my books, I found this recipe in Darian Allen's book. It caught my eye for it's simplicity.
I would recommend adding plenty of olives as it makes the dish taste even better. In the end I had each mouthful with 1 olive!
Serves: 550g.
Ingredients:
- 550g courgettes, peeled and chopped
- 2 garlic cloves, crushed
- 1 tsp ground coriander
- 1 tbsp lemon juice
- 1.5 tbsp olive oil
- salt to taste
- olives to taste (plenty!)
Method:
- Cook the courgettes in salted water until soft. Drain and press gently to squeeze out the excess water.
- Mash the courgettes with a fork.
- Add the lemon juice, garlic and ground coriander. Mix well. Taste. Add salt to taste and olive oil.
- Transfer to a serving dish and garnish with olives.
- Serve cold or at room temperature with crusty bread.
