Orange cake

Another one of my mum's recipes. It's a simple cake, yet extremely yummy.
My mum seldom baked cakes, yet when she did she always used the same tin. I don't think she had another. A cake tin with a hole in the middle, a tube cake tin. I really like the look of the cakes when they come out of this tin and never really have the courage to embellish them because I think they are already beautiful. I am not sure whether this is not a product of my childhood memories...
I inherited the tin. My mum didn't want it anymore and I couldn't part from it. All the cakes she used to bake, I bake them in this tin. It's a way to perpetuate the happy memories of childhood.

Serves: I forgot to count how many slices of cake, I would say about 8.

Ingredients:
  • 200g sugar
  • 125g unsalted butter
  • 250g plain flour
  • 2.5 tsp baking powder
  • 4 eggs
  • 1 orange (zest and juice)

Method:
  1. Butter and flour a 19 cm (7.5 inch) tube cake tin. 
  2. Place the butter and sugar in a large bowl and whisk until light and fluffy.
  3. Add the eggs, one by one, and whisk well until combined and light.
  4. Sieve the flour and baking powder into the bowl and mix.
  5. Add the orange zest and juice and mix.
  6. Add the mixture to the tin and bake for 40 min at 170°C. When it's cooked you should be able to insert a skewer in the middle of the cake and it comes out clean.
  7. Let it cool in the tin for 5 min and then remove from the tin and let it cool on a baking rack.
