Sweet potato & lentil soup
I wanted to make a lentil soup and I found no recipe on my books. I turned to the internet and found this recipe on the BBC Good food website. It is very very tasty!
Serves: 8 persons.
Ingredients:
- 2 tsp curry powder
- 2 onions (200g), chopped
- 1 eating apple (150g), peeled, cored and chopped (I used Royal Gala)
- 3 garlic cloves, crushed
- 50g coriander, stalks removed and leaved chopped
- thumb-size piece fresh ginger, grated
- 750g potatoes, peeled and chopped
- 200g red lentils
- 2 litres vegetable stock
- juice of 1 lime
- Salt & pepper to taste
- Olive oil
Method:
- Put the curry powder in a pan with olive oil and toast over a medium heat for 2 min.
- Add the onion, apple, garlic, coriander stalks, ginger and salt & pepper to taste and gently cook for 5 min, stirring every so often.
- Add the potatoes, lentils and stock to the pan and simmer covered for 20 min.
- Blitz the soup until smooth.
- Stir in the lime juice, check the seasoning and serve, topped with chopped coriander leaves.
