Sweet potato & lentil soup

I wanted to make a lentil soup and I found no recipe on my books. I turned to the internet and found this recipe on the BBC Good food website. It is very very tasty!

Serves: 8 persons.

Ingredients:

  • 2 tsp curry powder
  • 2 onions (200g), chopped
  • 1 eating apple (150g), peeled, cored and chopped (I used Royal Gala)
  • 3 garlic cloves, crushed
  • 50g coriander, stalks removed and leaved chopped
  • thumb-size piece fresh ginger, grated
  • 750g potatoes, peeled and chopped
  • 200g red lentils
  • 2 litres vegetable stock
  • juice of 1 lime
  • Salt & pepper to taste
  • Olive oil
Method:
  1. Put the curry powder in a pan with olive oil and toast over a medium heat for 2 min.


  2. Add the onion, apple, garlic, coriander stalks, ginger and salt & pepper to taste and gently cook for 5 min, stirring every so often.



  3. Add the potatoes, lentils and stock to the pan and simmer covered for 20 min.



  4. Blitz the soup until smooth.

  5. Stir in the lime juice, check the seasoning and serve, topped with chopped coriander leaves.
