Swede, leek and apple bake
Reading through Riverford recipe leaflet, I thought this was going to be a main dish but when I finished eating my dinner, I felt I had had a side dish and was still waiting for the main course. It works as a side dish, and that's all.
Serves: 4 persons (side dish).
Ingredients:
- 25g butter
- 2 leeks finely shredded (330g)
- 4 tbsp thyme (the recipe called for 4 large sage leaves but I forgot to buy and had thyme at home so that's what I used)
- 75ml white wine or apple juice (I used white wine)
- 1 swede, peeled, halved and thinly sliced (350g)
- 2 apples, cored, halved and thinly sliced (350g)
- 50g cheddar, grated
- salt & pepper to taste
Method:
- Melt the butter in a pan and fry the leeks very gently for 12 min, stirring now and then.
- Add the thyme and wine. Cook for 2 min.
- Season.
- Butter a baking dish and then layer the swede, apple and leeks, finishing with swede.
- Cover with foil and bake for 45 min at 180°C.
- Remove the foil, sprinkle with cheese and bake for 15 min until golden.
