- 2 large aubergines, sliced
- For the lemon pesto:
- 40g basil
- 50g pine nuts
- 1 garlic clove
- 50g parmesan cheese
- lemon: zest of 2 lemons + 8 tbsp juice
- 3 tbsp olive oil
- salt and pepper to taste
