Grilled aubergines with lemon pesto

I was surprised with this recipe. It's not just easy and quick to do, it's also quite yummy!

Serves: 2 persons.

Ingredients:
  • For the grilled aubergines:
    • 2 large aubergines, sliced
  • For the lemon pesto:
    • 40g basil
    • 50g pine nuts
    • 1 garlic clove
    • 50g parmesan cheese
    • lemon: zest of 2 lemons + 8 tbsp juice
    • 3 tbsp olive oil
    • salt and pepper to taste

Method:
  1. Grill the aubergine slices in the oven for 5 min each side. Keep them warm.
  2. Make the pesto: add all ingredients to a food processor and blitz it them a paste.
    Check the taste, add more of the individual ingredients if necessary.
  3. Serve the aubergine slices with pesto on top and bread.
