Bacalhau à Brás (Salted cod à la Brás)
Salted cod à la Brás is a traditional Portuguese dish that involves cooking salted cod with matchstick-sized fried potatoes. It is fatty and filing and delicious!
No one cooks matchstick potatoes from scratch. We buy them! They come in packets and they are my mum's favorite fried potatoes. She happily will munch through a small packet by herself.
Serves: 2 persons.
Ingredients:
- 200g salted cod (after soaked, cooked and deboned) - about 2 cod steaks
- 160g packet matchstick potatoes
- 1 large onion, halved and sliced (150g)
- 2 garlic cloves, sliced
- 2 bay leaves
- 4 eggs
- parsley, chopped, to taste
- pitted black olives to taste
- olive oil to taste
- slat & pepper to taste
- Sweat the onion, garlic and bay leaves in olive oil.
- Add the cod and stir whilst breaking the cod into smaller pieces.
- Add the fried potatoes and stir well until the potatoes have become soft.
- In a bowl, whisk the eggs and add salt & pepper to taste.
- Add the egg mixture to the cod & potatoes mixture, a little bit at a time to avoid the eggs from cooking too much. Keep mixing until until the eggs are completely incorporated into the cod & potatoes mixture.
- Add the parsley and black olives to taste. Stir and serve.
