Chocolate mousse

My mum's chocolate mousse is delicious. It is very compact and soft but it is not as runny as the ones you eat at the restaurants. 

Throughout the years I have tried to reduce the fat content to make it lighter and change the type of chocolate to make it more runny. I have had no success whatsoever and just quit trying to fix something that needs no fixing. Mum's always know better!

Serves: 5 persons.

Ingredients:

  • 125g unsalted butter
  • 125g dark chocolate (I use 70% although my mum would use 50%)
  • 5 eggs
  • 5 tbsp sugar
Method:
  1. Melt the chocolate in bain-marie.


  2. Whisk the butter with the sugar.

  3. Add the egg yolks and keep whisking.


  4. Add the melted chocolate and keep whisking.
  5. Whisk the egg whites to stiff peaks and then gently add to the mixture.

  6. Refrigerate for at least 2h before serving.
