Plum tarte tatin




Plums are in season and deliciously sweet. I wanted to do a desert with plums but I have never cooked plums before so I was unsure what to do with them.

I remembered I had always wanted to make a tarte tatin and, although originally made with apples, I found a recipe in Jamie Oliver's website. It sounded like a good opportunity to mix both. I wasn't mistaken!

This recipe is not just easy, it is tasty. Do have the tart with ice-cream as it is quite sweet. However, if you have a seriously sweet tooth, you'll love this one on its own!

Serves: 8 potions.

Ingredients:

  • 14 plums
  • ½ + ½ tsp cinnamon
  • 120ml maple syrup
  • 320g sheet of all-butter puff pastry
Equipment: 26cm ovenproof frying pan

Method:
  1. Place a 26cm ovenproof frying pan on a medium heat.
  2. Halve and destone the plums, add to the pan with 30ml water, and cook for 1 min.
  3. Sprinkle over ½ tsp cinnamon, then evenly pour over the maple syrup. There will be plenty of liquid in the pan. I was worried it would end up being quite soggy but it turns out it will all caramelise in the oven.

  4. Place the pastry over the plums, push it into the edges of the pan, and trim off any excess to patch up little gaps, if needed. The edges weren't very neat but they don't need to be as they will be on the underside of the tart.
  5. Bake in a 220⁰C oven for 16 min or until golden and puffed up.
  6. Remove from the oven and, confidently and very carefully turn the tart out on to a plate bigger than the pan. Turning the tart was easier than I though albeit I did ask my partner for help to avoid burning myself, something I am unfortunately very good at!
  7. Sprinkle over the remaining ½ tsp cinnamon.
  8. Serve with vanilla ice-cream. I only had chocolate ice-cream at home which I don't think would match with this tart. So we had it on its own. Sweet!
